Summer Shrimp Cups for Fish and Kids
We have been huge fans of Fish & Kids collections for a few years now. Florence has adored her midi dress which she’s worn so many times over the past few summers. Pilar always designs her collections with such intricate details and uses beautifully textured fabrics, so easy to wear. So when I received an email from Pilar to ask us to create a bespoke recipe for her new S/S 2020 collection we were thrilled. The brief - to make something fishy.
Together with the girls, we decided to make something fresh and simple, something perfect for a starter for an al fresco supper. Here’s our recipe for summer sprimp cups. We hope you enjoy it.
Ingredients:
1 packet of cooked king prawns
1 clove garlic, peeled and crushed
Small finger size piece of ginger, peeled and finely diced
Juice of 1/2 lemon
A Handful of fresh parsley chopped
For the assembly of the wraps:
1 small gem lettuce
1 carrot, peeled and cut into julienne slices
1 yellow pepper, cut into julienne slices
1 avocado, cut thinly
1 spring onion, thinly chopped
Method:
Combine the garlic, ginger, lemon juice, parsley and prawns to a pan with a little olive oil. Heat through for 3-4 minutes
Tear the gem lettuce leaves and place onto a dish. Place a prawn onto each lettuce cup and layer with the carrot, pepper and avocado. Pour a little of the prawn and garlic juice over the lettuce cups
Sprinkle with the spring onions and serve immediately.
