Three green dip - so fresh, so good!

We've had a whirlwind of a half term; what with school and end of year clubs but we've also been super busy in the kitchen. So busy we have loads of delicious recipes to share and now we've finally broken up for the summer it's time we shared them. First up is this super simple dip. Well the girls call it smoosh and I actually think it's such a better word to describe it. It's between a dip and a spread but the word 'smoosh' serves its purpose far better! With only 4 ingredients it's so quick to whip up and the children will feel super confident as it's so simple to make they'll be rocking this out all by themselves. 

To make the Three Green Dip :-

Ingredients

  • 1 ripe avocado
  • 10 ozs edamame beans (cooked and cooled)
  • a handful of fresh parsley 
  • the juice of half a lemon

Cook the edamame beans in boiling water and allow to cool. Cut the avocado in half and de-stone. Remove the flesh and put into a bowl.

Smoosh up the avocado until it's a mush. Once the edamame beans are cooled, add those to the bowl and again smoosh up with the back of a fork. Chop the parsley together and add to the mixture.

To taste add the lemon juice and serve on a delicious rosemary cracker.

It's as simple as that and the children will love it!
