After-School Energy Balls

I have shared one of our favourite after-school boosters on dear Emilie's Sweet Cabane blog. They are perfect for when the children come home from school and need an energy lift. They're just as good for mama's too! They are so simple, and so good for you and such fun for little hands to help out with.

Ingredients (Makes 20 balls) 

  • 200 grams almonds
  • 300 grams pitted dates
  • 4 tablespoons raw cocoa powder
  • 2 teaspoons chia seeds
  • 3 tablespoons coconut oil
  • the juice of 3 clementines or 2 oranges
  • 50 grams desiccated coconut (optional)

Begin by blitzing the almonds in the food processor for about 30 seconds. Add the dates and whiz together until they are both completely formed. Add the cocoa powder and give it another blitz. At this point you may need to scrape the mixture from the sides. Add the chia seeds and the coconut oil together with the juice of the clementines.

Once it’s all formed transfer it to a large mixing bowl and allow the children to give it a good mix through with a wooden spoon. I always ask my girls to mix something by hand as I believe it gives them the idea of how the mixture should feel. It’s also a great excuse to have a little taste test!

Roll the mixture into balls. We tend to split the mixture in two and leave half of the balls plain and the other we coat in coconut just to give a nice choice. Place them in the fridge for an hour to set. Storing them in an airtight container in the fridge will allow them to stay fresh for a few days.
