The Perfect Open Sandwich
I think we may have just made the perfect little sandwich! Okay so maybe I'm being rather bold in saying that but these mini pitta bread sandwiches are so delicious and so incredibly easy to put together. The girls and I love making them at the weekends and they are also great for guests who pop over for Sunday brunch served on a large welcoming platter. Trust me you're guests will be so impressed!
Here's what you need:
- one packet of mini wholemeal pitta breads
- caramalised onion humous
- a medium hard cheese (we use Scottish cheddar, jarlsberg or emmental)
- cherry tomatoes on the vine
- balsamic glaze
Pop the pitta breads in the toaster for a minute or so. Take a slice of cheese and place it on top of the pitta bread.
Spoon a dollop of caramalised homous on top of the cheese and spread it along the cheese. Cut two cherry tomatoes in halve, piling them on top of the humous.
Carefully dribble a few drops of balsamic glaze over the tomotoes and enjoy!
